Inside the Mandarin Oriental Tokyo, a 20-seat theater of culinary science unfolds nightly. Chef de Cuisine transforms the familiar into the fantastic — edible balloons, liquid nitrogen fog, spheres that burst with flavor on contact. Every course is a magic trick grounded in chemistry and a deep respect for Japanese ingredients. The 12-course journey rewires your understanding of what food can be.

Menu

01 · Foie Gras Crème Brûlée

Torched at the table. Caramelized sugar shell shatters to reveal a silken foie gras custard beneath. Served with brioche soldiers.

02 · Yuzu Caviar

Reverse spherification turns yuzu juice into pearls that pop on the tongue. Served on an oyster leaf with sea salt air.

03 · Liquid Nitrogen Gazpacho

Frozen tableside and shattered. Tomato water ice crystals melt on the palate, releasing summer in an instant.

04 · Edible Balloon

A helium-filled apple taffy balloon. Bite into it, inhale the helium, and taste green apple — pure childlike wonder.

05 · Wagyu with Smoke

A5 Miyazaki wagyu, sealed tableside in a glass dome filled with cherry wood smoke. Revealed with dramatic flair.

06 · Deconstructed Matcha

Matcha presented as powder, foam, gel, and ice cream — four textures, one familiar flavor, completely reimagined.
