Chef Kento Ushikubo — an art major turned culinary scientist — deconstructs familiar flavors and rebuilds them with techniques from laboratories and artists' studios. At his 8-seat counter in the Mandarin Oriental Tokyo, every course is a performance.

Each dish arrives with a hand-sketched illustration from the chef himself — a visual invitation before the first bite. The menu changes every six months, each iteration telling a new story through molecular technique.
